My last visit to Amelia Island was for sure a culinary experience. Here is a dressing that is so amazing on any crisp lettuce or over roasted vegetables.
CITRON CONFIT GREEN GODDESS DRESSING
1 tblspn mayonnaise
1 tblspn sour cream
(Option 1/cup plain whole yogurt in place of mayo & sour cream)
1 teaspoon garlic, minced
1/2 anchovy filet, minced
6 sprigs parsley, stemmed
4 sprigs basil, stemmed
1/4 fresh lemon juice
1/4 cup red wine vinegar
1 tsp Worcestershire sauce
Salt & Pepper to taste
Blanch the herbs in boiling water for a second or two. Drain and dry thoroughly on a paper towel.
Place herbs in a blender with mayonnaise & sour cream. Puree until smooth.
Mix in remaining ingredients, add salt and pepper to taste.
