Date Quick Bread

This beautiful bread which has the texture of a crouton and takes less than an hour. It is so easy and delicious. I just took it out of the oven, let it cool and cut into cubes for an appetizer and then served with left over Vegan Green Soup and an egg!

Date Quick Bread

Ingrédients:
4 dried dates (or figs)
1/2 cup of fresh parsley
1 3/4 cups of flour
1 tblspn baking powder
1/2 teaspoon fine sea salt
1/2 teaspoon ground pepper
3 large eggs room temperature
1/2 cup olive oil
1 tblspn honey
Zest of a clementine, tangerine or orange

Heat oven 350
Coat a 9×9 baking pan or a regular 8-9 inch loaf pan.
In a blender, pulse the parsley & dates. Set aside
In a large bowl, mix together the flour, baking powder, salt and pepper.
In a separate bowl whisk the eggs until blended, then whisk in the honey and oil.
Pour the wet ingredients slowly over the flour mixture and using a spatula stir until blended.
Lightly stir in date mixture and citrus zest. Do not over mix.
Scrape dough into the prepared pan and pat with spatula to even out the dough.
Bake for 15-30 minutes. Mine baked in 15 minutes. So it depends on your oven and the pan you use.
Unmold the cake onto a cooling rack. One cooled I immediately cut into approximately 1 inch cubes.
Enjoy that day….store leftovers in an airtight container for the the next day.

    Try it with your gluten free flour…..maybe add a little buttermilk ♥️
