CUCUMBER WITH FETA, MINT, PEA SHOOTS, RADISH & DILL
Love all the amazing surprises at our local farmers market each week. This week my favorite farmer www.thatchmorefarm.com had their first harvest of cucumbers and noticing the line was so long wanting to purchase their first harvest, I had to hop on. I must say it was so worth it getting there 30 minutes prior to the market opening, waiting in line, and purchasing some special cucumbers. *I do not peel the cucumbers if I purchase them directly from an organic farmer at the local market.
INGREDIENTS
5 Medium cucumbers, sliced 1/4 inch (I don’t peel…if purchased fresh at the local farmers market)
1/2 tspn grated garlic
1 tablespoon lemon juice
1 cup of pea shoots (or arugula) lightly chopped
2 tablespoons fresh organic olive oil
2 radishes thinly sliced
4 ounces feta, cut into 1/2 inch cubes
2 tablespoons chopped mint
Salt and pepper to taste
Sprinkle of fresh dill
Place cucumber in a large bowl, season with salt and pepper. Add garlic, lemon juice, olive oil, feta and toss to coat. Toss in arugula/pea shoots/Radishes/mint… Adjust seasoning to taste with a little oil, salt and pepper.

GROWING MINT
I like growing my mint in small pots around my garden with other plants like lemon verbena. Mint is an invasive plant which you need to grow in a pot and not in your garden. It grows so easily at a kitchen window or on your porch in a small pot.
