Banana bread is a staple in our kitchen so I am always creating new banana bread recipes just for fun. Banana bread is so easy and rewarding. During the summer months I do store the bread in the fridge…eat it chilled or warm it up in the oven…or spread a little almond butter for the finishing touch.
SIMPLE BANANA ALMOND BREAD
Prep time: 15 minutes
Cook time 1 hour
1 1/2 cups all-purpose flour or Gluten free
1/2 cup almond flour
1 tspn baking soda
1/4 tspn salt
1/3 cup brown sugar
1/2 cup butter – softened
2 large eggs beaten
3-4 mashed overripe bananas
1/3 cup slivered almonds
Preheat oven to 350 degrees. Lightly grease a 9×5 loaf pan.
Combine flour, baking soda and salt in a large bowl.
Beat brown sugar and butter with an electric mixer in a separate bowl until smooth. Beat in eggs and mashed bananas until well blended. Stir banana mixture until combined.
Pour batter into the prepared loaf pan.
Sprinkle a few slivered almonds on top.
Bake in preheated oven about 60 minutes or until a toothpick inserted into the center comes out clean.
Let cool for 10 minutes then turn out onto a wire rack to cool completely.
