Autumn colors are peeking through here in the city and upstate which means we will be seeing it happen at the Farmer’s Market. The first of the root vegetables that caught my eye were the sweet potatoes.
Here is one of my favorite side dishes or just a wonderful afternoon snack.
COUNTRY STYLE SWEET POTATOES
(SERVES 2-4)
PREHEAT OVEN TO 425F
6 medium sweet potatoes – pealed and quartered
2 cups of finely chopped fresh rosemary
4 cloves of garlic finely chopped
salt & pepper
Mix rosemary & garlic in a bowl with ¼ cup olive oil
Toss in potatoes & mix with a little salt and pepper
Spread on a lined cookie sheet
Roast in oven on middle rack for 10 minutes, then turn and roast another 8-10 minutes
Roasting time varies on thickness of potatoes
Place on a gratin dish and garnish with a little sprinkle of salt
Serve hot or room temperature
