Every culture has some form of stew… I love exploring all the different ways of slow cooking with varied spices in winter. After this beautiful storm Stella, I was inspired to pull out the Cooks Illustrated Cookbook and see what would inspire me.
I chose their Indian-Style Curry with Potatoes, Cauliflower, Peas, and Chickpeas. It was amazing! Serve with jasmine rice steamed with a kefir leaf and Cilantro-Mint Chutney.
Easy to prepare and ready to serve in less than an hour!
