Spring is here and apple season is ending… I thought it would be a great finish to the apple season
with one of my favorite recipes.
Mixed Apple Crisp
3 tbsp unsalted butter
2 lbs mixed cooking apples: peeled, cored, quartered, and cut into wedges
2 tbsp lemon juice
1/2 tsp ground cinnamon
1 1/2 tsp vanilla extract
2 large eggs room temp
6 tbsp sugar
1 cup heavy cream
Preheat oven to 400° F
Use 10 1/2 inch baking dish – generous butter the bottom and sides
In a large skillet, combine the butter, apples, lemon juice and 1/4 tsp cinnamon
Cook until soft (approx. 6 minutes)
Stir in 1/2 tsp vanilla extract
Transfer apples to the baking dish, spreading them in one layer
In a large bowl combine the eggs and sugar, whisk until blended
Stir in the reserved cinnamon and vanilla
Pour over the apples in the baking dish
Place baking dish in oven and bake about 45 minutes until the top is deep golden brown.
Do not under bake! Our goal is something crisp!
Serve immediately
