The perfect spring guacamole

Spring is one of my all time favorite seasons at the Farmers Market.
During Spring you may find me there 3 times in a week as there is always something beautiful that has been harvested.  It also creates an opportunity for exploration and trying new greens.

This past week we have seen an abundance of Ramps which I love.  Technically it is in the leek family very well known in Europe and fairly new to Americans. It is so wonderful to hear the various vendors explain to customers what a ramp is, its relationship to a leek and the multiple ways to introduce them into a meal.

I created this irresistible guacamole for a girls tapa night meeting. Everything served was vegan and gluten free.
The menu included roasted beets, sweet potato chips, rice crackers, hummus and strawberries.  All organic including the champagne!  The gathering was planning the flowers for my niece’s wedding.  My dear friend and very talented Chelsea will be doing the flowers.  Please check out her Instagram and follow her!!!  Tons of inspiration!  #pinenewyork   (merci chelsea for the photo)

Guacamole with ramps – makes approximately 1 cup

1 Avocado
1/2 red onion
4 ramps (stem only no greens)
1/2 cup of slightly steamed fresh green peas
mint
micro celery greens (optional)
1/2 meyer lemon
*Wild Icelandic Kelp (optional)
salt, pepper

Chop finely red onion and ramps
Lightly smash the peas (not too much as you want the texture)
Chop finely a few mint leaves and a handful of micro celery greens
Mix in a small bowel and squeeze in juice from lemon
Add avocado and mix well
Season with 1 tsp of Kelp, salt & pepper

*Wild Icelandic Kelp – this is my new found seasoning.  I love to accent dishes that benefit from a salty finish. Not only does this add such incredible flavor it is filled with nutrients. Kelp is a natural source of vitamins A, B1, B2, C, D and E, as well as minerals including zinc, iodine magnesium, iron, potassium, copper and calcium. (10 times more calcium than milk) I found this at my local market, however you can order online www.ourharvest.com. Our Harvest is new to me and I am loving exploring all they offer.
