A Taste of the Holidays ~ Quick and Easy Scones

It has been the most amazing and relaxing holiday in New York with my boys.

I so loved creating meals, chilling by the fireplace, entertaining friends and embracing the holiday season in the most relaxing way possible. In a tight space in NYC…..you can create beautiful meals and memories.
A tradition in the family has been morning scones as we open Christmas presents.  Here is an easy and not very difficult recipe that will satisfy everyone.

QUICK AND EASY SCONES

Ingredients:
2 CUPS FLOUR
1/2 CUP BUTTER – CHILLED AND CUT INTO 1/4 INCH PIECES
4 TSPN BAKING POWDER
1/4 CUP CANDIED ORANGE OR 1/2 CUP RAISINS….LOVE GOLDEN RAISINS
1/4 SUGAR
1 EGG BEATEN
3/4 CUPS OF CREAM – BEAT IN WITH EGG
1 TSPN CINNAMON

Directions:
Preheat Oven to 375 F
The old fashioned way to make the scones is to chop in the butter till the flour forms pea size lumps. When short for time, my way is to use a food processor and be mindful to not over process.

Place flour and butter in a food processor and pulse till grainy and not too pasty. Keep mindful it should have a dry and granular texture.
If using candied orange, add and pulse for a second or two until blended.
Remove and place in a large metal bowl.
Stir in sugar, baking powder and cinnamon.
Lastly, add in cream and egg mixture. If adding raisons now is the time to mix them in…..

If the texture is too wet add a little flour….if too dry add a little cream.The end result should be not too sticky.

Flour a board and flatten dough on board. I tend to switch around and use a glass to make the perfect round scone to making a rectangle and cutting out the shapes…which is what I did here.

Bake 25 minutes & Enjoy!
