In 1970 orange cauliflower was discovered in Canada. This unique vegetable is from the Brassica family like brussel sprouts, broccoli and cabbage. It is creamier and and more sugary than regular cauliflower. I so love the taste as well as the pop of color it adds to any dish.
Usually, you will find this vegetable in the fall, however, I stumbled upon it at my most recent visit to the Farmers Market.**Note, this variety is 25% higher in Vitamin A than the common white variety.
I roasted a little tofu and tossed it in my favorite nutty rice.
