PANKO CRUSTED COD
4 1/4 lb. cod filets
1/2 cup finely ground panko flakes (grind panko until it is like flour)
1 clove of garlic minced finely
1 tablespoon finely chopped parsley
1/4 cup olive oil
zest of one lemon grated
salt and pepper
pinch of red pepper flakes
Gremolata – Combine parsley, garlic, olive oil, lemon zest, red pepper flakes…salt and pepper to taste
On a large plate place panko crumbs and dip each cod filet until coated on all sides.
Heat a large cast Iron pan on top of stove lightly coated with olive oil.
Place each filet on pan. Sear for 4 minutes.
Spread on top of each filet the parsley mixture (gremolata). Flip each filet and cook another 3-4 minutes.
I served this with my recent bean dish recipe. (King of the Early Dried Bean)
It is also lovely with a fall salad of crispy radicchio, fennel and baby gem lettuce.
