So loving all the beauty Fall and Winter embraces us with. It was hard for me to dig into my Fall arrangement and create something with the Acorn Squash.
Here is something I made last minute for lunch and it took only 40 minutes prep to finish!
ROASTED ACORN SQUASH
2 Acorn squash
1 cup croutons
16 sage leaves
2 Tblspn Olive oil
Salt and pepper
Red Chili pepper flakes
Preheat oven 400.
Slice squash in half and clean out pulp.
Toss croutons, olive oil, salt and pepper in a small bowl.
In the center of each squash place 4 croutons in each with herbs.
Sprinkle lightly with red chili pepper flakes.
Place in a baking tray and cover lightly with foil.
Bake approximately 30 minutes until tender.
Serve as is! I had two for lunch!
