Vegan Irish Soda Bread
3 1/4 Cups flour (also great half whole wheat & white flour)
1/2 Tspn salt
3/4 Tspn baking soda
1 1/2 cups unsweetened almond milk
1/2 currants or raisins (optional)
1 tblspn caraway seed (optional)
Preheat oven 450.
In a large bowl sift flour, salt and baking soda.
Mix in currants, raisins and caraway seeds at this time.
Make a well in cent of bowl and gently stir in almond milk. Do not over mix.
Place dough on a floured board and Knead gently. I split this into three small loaves as I love the slices to have a crispy crust. You can bake this whole as well (however, baking time will be longer).
My pan of choice is always a cast iron pan. Take the shaped round dough and place in a cast iron pan.
Slice a cross a few inches from center.
Bake for 15 minutes, then reduce oven to 400. Bake another 15-20 minutes…test with a knife or just press on top.
Once the knife comes out clean it is done!
This is best served within hours of being baked with a little honey or jam!
