Potato Gratin Towers
(6 individual towers)
Preheat oven 375
2 large Idaho potatoes
1 yellow onion – peeled and sliced thinly
3 cloves of garlic – peeled and sliced thinly
1 tblsp thyme
1/2 tblsp white wine
1 – 2 tblspns butter
1/4 cup grated parmesan
Salt & Pepper
Sauté onions in a little olive oil under medium heat stirring frequently. Reduce heat, add a little butter, garlic, thyme and simmer for 20 minutes until caramelized, stirring frequently.
Peel and slice potato thinly – blanch in boiling water for 3-5 minutes. Drain and dry on a paper towel.
In a muffin pan, butter 6 cups generously, add a layer of potatoes, then onions a touch of butter, salt, pepper and
repeat until each cup is full.
Pour in a little of the wine in each cup. Top each cup with grated Parmesan cheese.
Bake approximately 25 minutes or until easily pierced with a knife.
