Mushrooms are the best condiment to almost any dish I make. Every week I buy fresh mushrooms at the market knowing they will accent some meal I will create that week. Here is my simple mushroom recipe that complements just about every dish.
SIMPLE SAUTÉED MUSHROOM SAUCE
2 cups of assorted mushrooms – cleaned and chopped into 1” – 1/2 slices
1 medium onion finely sliced
3 cloves of garlic finely sliced
1 tbsp tarragon finely chopped
1 tbsp butter
1/2 cup white wine
1/4 cup of heavy cream (optional)
olive oil
Salt & Pepper
In a cast-iron pan heat up 1 tbsp of olive oil, add in the onion and sauté til translucent.
Add in the garlic and tarragon. When garlic is slightly crisp add in butter and mushrooms…stir and
slowly add in wine and cream. You should establish a creamy base…..if it dries out add a little wine and butter.
This is a wonderful with pasta, fish, polenta or even in an omelet!
