A few years ago I had the most amazing experience dining at the beautiful restaurant, ‘SPRING”. Chef Skye Gyngell restaurant is located in a 19th-century drawing room within Somerset House. My dear friend, Sue Copeland, and her son joined me for dinner. All the dishes served were seasonal as the menu changes often and absolutely delightful. Skye, originally from Australia is one of Britain’s most respected and acclaimed chefs. She trained in Sydney, Paris and then settled in London. I treasure her cookbook from the recipes to the stories of what chefs inspire her and how she created her restaurant. I am so enjoying digging in and creating so many of the inspiring and unique recipes.
