
Every season brings an abundance of seasonal delights. As I walked to the Farmer’s Market this week wondering what I would create for a dinner party that evening for my son and friends. I usually have an idea, however, I wait until I walk around the market to see what is new and exciting. To my surprise, there were fresh peas, garlic scapes, first-of-the-season tomatoes, and an assortment of radicchio. The menu was immediately coming together even though I was not sure what the preparation would be for all the gorgeous gourmet treasures I walked home with. I picked up a fresh pasture raised chicken at the Farmer’s Market and some HODO tofu at Whole Foods.
The Pesto Récipé…yields approximately 3 cups
~1/2 – 2/3 cup of washed and coarsely chopped garlic scapes. (I use the bulb and about 2” above the bulb)
~2 cups fresh shelled peas
~1/4 cup olive oil (a little more if the texture is too thick once blended)
~Salt & Pepper
~Parmesan cheese grated (optional)
Add all ingredients in a Cuisinart and blend until creamy adding extra olive oil as needed).
Blend in a 1/4 cup of parmesan if desired. I did….
This is fantastic served with grilled tofu, pasta, chicken or fish!
Will keep in an airtight jar in fridge for approximately 2 weeks.
