ITALIAN STYLE CHICKEN MEATBALLS
“So simple and delicious”
INGREDIENTS (approx. 14 meatballs)
1 lb. boneless, skinless chicken breasts – cut into 2” chunks and freeze on a tray for about 1/2 hour
1 small chunk of not to0 hard parmesan or 1/2 cup grated
1/4 of mixed fresh herbs chopped (I used oregano,parsley and sage)
1 small onion cut into chunks
salt & pepper
2 tablespoons extra virgin olive oil
gluten freen flour for dredging
While uncooked chicken is in freezer prepare other ingredients.
In a food processor put parmesan, herbs and onion and process until everything is finely chopped.
Add partially frozen chicken, generous amount of salt and pepper. (I did add a little chil flakes as well).
Pulse until the chicken is coarsely ground – finer than chopped but not like mush🧐.
Shape into 1 1/2” round meatballs lightly pressing.
Heat oil in a large skillet (prefer cast iron) over medium heat.
Lightly dredge each meatball in the flour and add to the oil.
Cook till the meatballs are brown all over. You know when they are done by their firmness…do not overcook.
These are fantastic served warm over some pasta or polenta or on their own with a little sauce and dipping bread! They freeze well!
