This is the perfect recipe for easy to peel hard boiled eggs. Best to keep in fridge covered and unpeeled. To peel, I like to place under running water and the shell comes off so effortlessly. I like to have at least 6 eggs ready in the fridge every week for my honey and I for a last
minute protein fix.
Add six eggs to a pot of water so that the eggs are covered by at least an inch or two of water.
Bring to a rolling boil with pan uncovered.
Turn off the heat, cover and let sit for approximately 10-12 minutes. I like 10 minutes so the Yoke is softly cooked not too dry.
Meanwhile, prepare an ice bath of water to submerge the eggs after they are cooked.
Let sit in ice bath for 5-10 minutes then transfer to a glass container with lid.
Store for up to 5 days or make a beautiful egg salad right away! My favorite!
Reminiscing on the days in SoCal when my sweet friend Robyn would make egg salad sandwiches by the pool…so miss those days.
