2 pieces of rice paper (place each between damp paper towels till softened)
2 organic eggs
1 cup broccoli rabe chopped and lightly steamed
1 clove of garlic – sliced thin
1 shallot sliced thin
salt n pepper
salsa

In a cast iron pan with med-high heat and a teaspoon of olive oil and cook shallots and garlic til crisp
Remove when done and scramble eggs. Best to turn off the heat and the eggs will cook quickly.

Mix garlic and shallots with broccoli rabe add salt and pepper.

add egg and rabe mixture to the rice paper and roll like a burrito!

Top with your favorite salsa.
