In my 40 years of making Vodka Cream Sauce, I have found you cannot be committed to one and only one recipe. This most recent recipe just captivated me and the end result was so amazing I wanted it as a soup.
This is my vegetarian recipe… you are more than welcome to add some Italian sausage – which is the way my sweet late husband liked it 🙂
INGREDIENTS
3 cipollini onions chopped fine
3 tablespoons olive oil
4 cloves garlic finely chopped/minced
4 cups fresh cherry tomatoes (or canned if out of season)
1 cup white wine
2 tablespoons capers
1/2 tsp hot pepper
1/4 cup fresh oregano finely chopped
1/4 cup basil finely chopped
1/2 cup heavy cream
1/3 cup vodka
Salt/pepper
Sauté onion in a large pan with 3 tablespoons of olive oil until tender, add garlic and simmer 3-5 minutes on low heat.
Add tomatoes, white wine and simmer, covered for 10 minutes.
Add capers, hot pepper, basil and oregano. Stir and simmer low for 30 minutes (add a little more white wine as needed).
Finish with heavy cream and vodka – stir and simmer for 10 minutes.
Add salt and pepper to taste.
