Roasted Acorn Squash
Preheat oven to 400F
1 acorn squash cleaned, sliced in half and seeded
1 cup of coarsely chopped kale or swiss chard
4 cloves of garlic
salt and pepper.
chili pepper flakes (optional)
Toss greens and garlic with a little olive oil to coat.
Add salt and pepper
Place inside squash and brush a little olive oil around cut edge.
I like to sprinkle a little chili pepper flakes.
Place on a cast iron pan, foil or cookie sheet.
Bake approximately 20 minutes.
Yummy! So healthy and simple!
