HERBED SEARED COD
with mushroom & garlic saute
2 Cod filets (3-5 oz. each)
2 tablespoons of oregano & thyme
salt & pepper
Mushroom & garlic saute (see recipe previously)
3 cups of fresh spinach
Coat cod on both sides with herbs and set aside.
Heat a large saute pan and add washed spinach with a few tablespoons of
water. Stir and saute until wilted.
Meanwhile, heat a cast iron pan on high. Reduce to medium and add cod.
Sear both sides for approximately 3 minutes each side. Remove from heat.
Add mushroom & garlic saute to spinach stir over medium heat for a few
minutes.
Place spinach mixture on a plate and add cod. Salt and pepper to taste.

Looks so good and excellent source of Omega 3. Did you know that low level omega 3 increases/activates our stress response and release of cortisol which can lead to all sorts of inflammatory disorders? Merci Chef Una:)
