Spring has arrived in New York and the Farmer’s Market is rewarding me with so much culinary beauty every week. I am a fan of Campo Rossa Farm and their baby gem lettuce. The leaves are the perfect size for making lettuce wraps. I have been enjoying creating various versions with leftover salmon, cod, wild planet tuna and just simple chopped vegetables. It is gluten free and so full of flavor. Union Square Market brings me so much happiness today more than ever.
Baby Lettuce Wraps
2 servings – preparation 15 minutes max!
1 cup of cooked cod, salmon or a can of tuna drained
1 tablespoon organic mayonnaise (a little mayo is delicious)
1/2 small red onion chopped finely
1 tablespoon fresh dill or parsley or both – chopped finely
pitted olives halved (optional)
8 leaves of baby gem
Salt and Pepper
Mix fish, mayo, onion, and herbs in a bowl. Season with Salt & Pepper
Spoon fish on lettuce leaves and garish with olives, chopped tomatoes or any other fresh herbs you have!
