Vegan Spinach Soup
Ready in 15 minutes! I always have homemade vegetable stock in my freezer. Recipe in my blog for the stock. I keep fresh ginger and turmeric in the freezer and grate frozen. Dried works as well.

4 cups fresh spinach
1 cup frozen organic peas
4 cups vegetable stock
1 tsp turmeric
2 tsp ginger
Salt, pepper and chili pepper flakes to taste
Heat stock in a stock pot, add spinach and peas.
Simmer and stir for a few minutes. Add turmeric, ginger, salt and pepper to taste.
I tried this soup two ways…chunky and puréed. I liked the latter…puréed.
