IRISH SODA BREAD☘
4 cups all purpose flour
3 tblspns sugar
1 tsp salt
1 Tspn baking soda
5 tblspns unsalted butter, cold and cubed
2 tablespoons caraway seeds (optional)
1 cup raisins (I like golden or currants)
1 large egg
2 cups buttermilk
Lightly grease/butter a cast iron pan. Or, line a baking sheet with parchment paper. FYI, I really like using a cast iron pan.
Preheat oven 400 degrees
Whisk wet ingredients together.
Mix dry ingredients in a separate bowl.
Cut cold butter into flour mixture so it is has a pea texture. (Just like scones).
Use a fork, your hands or a pastry cutter to do this.
Make a well in the flour mixture and slowly add in the wet ingredients.
With a little flour on your hands form a flat like ball.
Place on pan of your choice and shape into a circle. With a knife, score a little cross on the dough.
Bake until golden brown. Test with a sharp knife or toothpick to test to see if it is done.
Best the day it came out of the oven! Toast the next morning!
