I have had so many requests for VEGAN recipes and I came to realize most of my diet is VEGAN. So, I am so happy to share with you some simple, easy, nutritious recipes that I love. Keeping it simple and balanced is the key.

Vegan Spinach & Sweet Potato
1 Medium sweet potato peeled and cubed….toss in olive oil, roast in oven @375degrees & toss to brown all sides (approx. 20 minutes)
2 cups fresh spinach, wash and dry
1 can cannelli beans, rinsed
1 cup green beans
1/2 fava beans (optional)
Citrus dressing:
2 tablespoons fresh grapefruit juice, 1/4 cup olive oil, 1 tablespoon Dijon mustard, salt and pepper to taste.
Toss ingredients with dressing in a bowl. Serves 2 as a main course.
