Olive Oil Crackers

I love when I get requests for recipes!  I hope you enjoy this amazing and simple recipe!  You may never buy store bought crackers again.

Olive Oil Crackers

Beautiful crackers in less than 40 minutes and they keep for a week!
2 cups all purpose flour ( or 1 1/2 cups whole wheat flour 1/2 cup all purpose flour)
3/4 teaspoon salt
1/4 cup water
2 large eggs
1/4 cup olive oil and 1 tblspn for brushing the dough
1 garlic clove minced
2 tablespoons za’atar
1 tablespoon course salt
Preheat oven 375 degrees
Line baking sheet with parchment paper.
Sift flour and salt in a large mixing bowl. Whisk eggs, olive oil, water, garlic in a separate bowl.
Slowly add liquid to the flour and mix together until ingredients are blended and dough comes together.
Wrap in plastic and let rest for 15 minutes.
Split dough in half and roll out to a thin layer approximately 1/8 inch thick.
Brush with Olive oil, sprinkle with za’atar and salt. Cut in squares and place on cookie sheet.
Bake for approximately 15 minutes. Let cool and roll out remaining dough and bake.
Once cooled place crackers in an airtight glass jar. Enjoy within a week!
