SWEET POTATO FRIES WITH SPINACH PESTO
oil free…gluten free…vegan
This is amazing as a side dish with a main course or an appetizer, or a midday snack served with a fat-free spinach and herb pesto. Easy, delicious, and a crowd-pleaser!!!
2-4 servings
Preheat oven to 400F
2 1/2 lbs. Japanese sweet potatoes – cut into thick fries
1 tsp fresh or dried oregano or thyme
On a lined baking sheet, spread sweet potato and sprinkle with herbs
Bake for 40-45 minutes
While the fries are baking, place all the pesto ingredients in a blender
Spinach Pesto
3 cups fresh, loosely packed spinach
2 tablespoons fresh lemon juice
1 cup fresh basil or parsley
2 cloves of garlic
2 tablespoons water
1/2 teaspoon raw honey (optional)
When fries are ready, plate and serve warm with pesto!
