This is a wonderful dish to serve if you want to eliminate carbohydrates and add another wonderful vegetable to your meal. Here, I served it with grilled salmon and asparagus.
Cauliflower Mash (mock mashed potatoes)
1 Medium head of cauliflower
1/2 teaspoon minced garlic
1/2 teaspoon of a herb of your choice….I like chives or dill
olive oil
1/4 cup parmesan cheese (optional)
salt & pepper
extra virgin olive oil
Clean and cut cauliflower into small pieces. * Blanch for a few minutes in boiling water and drain well. Immediately pat dry cauliflower between several layers of paper towels.
In a food processor, add cauliflower, parmesan, garlic, 1/2 teaspoon of salt and a pinch of pepper.
Blend until almost smooth…you want a little texture. Mix in a little of the herbs and keep warm in oven until ready to serve.
Add a tablespoon or two of extra virgin olive oil to enhance the flavor.
I love using an ice-cream scoop to serve on each plate.
OPTION *Roast garlic in oven with rosemary to give it a richer and deeper flavor!
