This almost like a dessert! A complement to so many vegetarian dishes as well as the Turkey 🦃 . I love this on steamed rice with vegetables or lentils. Keeps one week in the fridge.
CRANBERRY CHUTNEY
Preparation 40 minutes
Yield 2 cups
2 bags fresh cranberries – rinsed
1 cup golden raisins
1 1/2 cup sugar
1 tsp fresh ginger
1 tablespoon cinnamon
1 cup water
1 tablespoon of orange zest
Combine in a saucepan and cook 15 minutes meanwhile, prepare the following:
1/2 cup of chopped onion
1 apple peeled & chopped finely
1/2 cup finely chopped celery
After 15 minutes, stir in onion, apple & celery and simmer another 20 minutes stirring often. Let cool and store in an airtight container.
